Instructions
 

Marinate

  • In a CONTAINER, combine all the ingredients for the marinade.
  • Adjust the sweetness to taste.
  • Add the chicken pieces and thoroughly mix to ensure they are well-coated.
  • Cover the container and refrigerate overnight to allow the flavors to meld. Turn the chicken occasionally.

Grill [6]

  • Remove the chicken from the marinade, shaking off any excess. Reserve the remaining marinade for basting.
  • Rub the marinated chicken evenly with the Huli Huli spice blend.
  • Preheat the grill to medium-high heat.
  • Grill the chicken, turning occasionally and basting with the reserved marinade, until fully cooked and nicely charred.

Serve

  • Arrange the Huli Huli chicken on a platter with a bed of rice or grilled vegetables with a side of grilled pineapple slices. Sprinkle with green onions.

Instructions
 

Prepare the Meat

  • Cut the meat on all sides with 1/4- inch-deep slits about 1 inch apart.
  • Rub the meat on all sides with the Kalua spice blend.

Cooking Option 1 - In the Oven

  • Preheat the OVEN to 270°F.
  • Line a roasting pan with aluminum foil. If using chicken without skin, add 2 tbsp oil.
  • Place the meat in the center. Add 1/4 cup of water. Cover the pan tightly with aluminum foil.
  • Roast the chicken for about 2 hours or the pork for 4-5 hours until it is tender and easily shreds with a fork. If using pork, check every hour and add some water if necessary.

Cooking Option 2 - In the Slow Cooker

  • Place the meat with 1/4 cup of water into the cooker. Cover with the lid.
  • Cook on low for 4-10 hours or until the meat is tender and shreds easily.

Shred the Meat

  • Once cooked, remove the meat. Shred the meat into smaller pieces by hand or with two forks.

Serve

  • Serve Kalua with your choice of traditional Hawaiian sides. Enjoy!

    The filling should be moist but not watery.
  • Then, add the potatoes and optionally, parsley. Mix well.

Assembly

  • Line a 9-inch greased PIE DISH with one pastry sheet.
  • Spread the filling on top.
  • Place the other pastry sheet over the filling, and seal and crimp the edges of the pie.
  • Cut a few slits in the top crust to allow the steam to escape.
  • Cover the edges with small strips of ALUMINUM FOIL to prevent it from burning.

Bake

  • Preheat the OVEN to 450°F. Bake for 10 minutes.
  • Reduce temperature to 350ºF.
    Bake for 45 to 60 minutes, or until the crust turns golden.

  • Let the pie cool for 10 minutes before slicing and serving.

  • Scoop the asparagus out and keep it warm.

Sauce

  • In the same POT, careful of splatters, add 1 cup of water, parmesan, and salt & pepper to taste.
  • Mix well and bring to a boil.
  • Turn off. Keep warm.

Fish

  • Season fish with Blackened spices and salt to taste.
  • In a PAN, heat 1 tsp vegetable oil (not olive oil!) to smoking hot.
  • Stir in 2 tbsp of butter. Add fish.
  • Flip the fish when one side is blackened.
  • Lower the heat if the fish needs more time to cook through.
  • Serve the fish with lemon, asparagus with sauce, and your selected additional side/s.
