  • 1/4 cup milk or substitute

  • 1/2 lb elbow macaroni
  • 1 cup mayonnaise or substitute
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar or syrup, or to taste
  • 1/4-1/2 cup finely chopped pineapple (optional)
  • Salt and pepper to taste

Instructions

1. Prepare the Noodles

  • Cook the macaroni according to the package instructions. Ensure it's cooked al dente.
  • Drain and rinse with cold water. Let it cool down for 15 minutes.

2. Prepare the Dressing

  • In a large BOWL, add mayonnaise, milk, vinegar, sugar, and optionally pineapple.
  • Whisk until well combined.
  • Season with salt and pepper to taste.

3. Combine

  • Add the macaroni to the bowl with the dressing.
  • Gently fold the macaroni into the dressing until they are well coated.
  • Add salt & pepper to taste.
  • Add the vegetables and gently mix until evenly distributed.

4. Chill Overnight

  • Cover the bowl and keep it in the fridge overnight.
  • Adjust salt & pepper to taste.
