Ingredients

Fresh Produce

  • 1/2 head green cabbage, finely shredded (optionally, mix with red cabbage)
  • 1 carrot, finely grated
  • 1 small onion, finely chopped
  • 1-2 tbsp finely chopped cilantro or parsley
  • 1/2 cup finely chopped pineapple or mango, or mandarin (optional)

Packaged Food/Staples for Dressing

  • 2 tbsp apple cider vinegar
  • 1 tsp soy sauce or substitute (optional)
  • 1 tbsp (brown) sugar or syrup, or to taste
  • 2 tbsp vegetable oil
  • salt & pepper to taste

Instructions

  1. In a large BOWL, add all dressing ingredients and whisk to combine well.
  2. Add the cabbage and knead the dressing into the cabbage.
  3. Add the remaining ingredients and mix well.
  4. Let chill in the fridge for about one hour.
