But this is not all. The Aussie Burger is also called “Burger with a lot” due to its many layers. Beetroot and pineapple are characteristic ingredients, and so is a sunny side up egg. Add your onions, bacon, or cheese, just as you like your favorite burger anyway.

Tasmanian Tomato Salad Side

Add a fruity tomato side salad with a kick from precious Tasmanian pepperberries, also called Mountain Pepper. Notice the slightly purple color that the berries develop in the vinaigrette.

  • 1 jar pickled beetroots sliced
  • 1 can pineapple rings
  • 8 large lettuce leaves
  • 4 large tomato/es chopped
  • 2-3 kiwi (golden) chopped
  • 2 tbsp lemon juice
  • 4 eggs
  • 4 hamburger buns
  • olive oil
  • salt & pepper
  • mayonnaise and/ or your favorite ketchup or BBQ sauce

Culinary Spice Kit

Instructions
 

Side salad

  • Chop Aussie Spices with a sharp knife.
  • Be careful not to shoot the spices across the kitchen.
  • In a BOWL, mix lemon juice with Aussie Spices, salt to taste, and 1 tbsp oil.
  • Mix with tomatoes and kiwi. Set aside.

Burger

  • In a PAN, heat 1 tbsp oil over medium heat.
  • Fry patties until cooked to your desired doneness.
  • Transfer patties to a plate and cover.
  • Shortly, fry the cutting sides of the buns.

At the same time

  • In a second PAN, heat 1 tbsp oil over medium heat.
  • Fry eggs to your liking.
  • Season with salt & pepper.
  • Transfer to a plate and cover.
  • Fry pineapple on each side until golden and caramelized.

Serve

  • Serve all ingredients on separate plates.
  • Everyone can assemble the Burger with a lot to its liking.

  • 1 lemon for juice
  • 1 red cabbage ** finely shredded
  • 1 large onion grated
  • 2 cloves garlic grated

  • salt & pepper

Koobideh Culinary Spice Kit

  • Sumac, turmeric, black pepper, parsley

Optional

  • 1 onion halved, thinly sliced
  • 1 cup radishes thinly sliced

Suggested Sides

  • Lavash or pita bread
  • Basmati rice
  • Grilled vegetables
  • Sabzi Khordan ***

Instructions
 

Cabbage

  • In a BOWL, mix 1 tbsp lemon juice, salt & pepper to taste, and 1 tbsp oil.
  • Add the cabbage and knead well.
  • Cover and let rest for 2 hours.

Prepare

  • In a BOWL, squeeze grated onions and discard most of the liquid.
  • Add garlic, Kabob Koobideh spices, salt to taste (recommended 1 tsp).
  • Mix well. Add meat. Knead well for 5 minutes.
  • Keep it in the fridge for 30 minutes.

Fry

  • Wet your hands with water.
  • Form 2 tbsp of meat into flat rectangle shaped meat patties. Make sure that they are as flat as possible.
  • In a PAN, heat 1 tbsp oil over medium heat.
  • Fry the kabobs for some minutes on each side until they are cooked and slightly browned.

Serve

  • Optionally, sprinkle the kabob with sumac and top it with onion & radish slices.
  • Serve the kabob with your preferred sides.
  • Enjoy!

Notes

* 2/3 beef, 1/3 lamb or all beef (20-30% fat), or ground chicken thighs.
** Substitute red cabbage with green cabbage, and/ or add some shredded carrots or apples.

Kabob Koobideh is the most popular grilled ground meat in Iran and around the Persian Gulf. The meat is prepared differently to a burger.   • 2 lb ground lamb (beef, or chicken)

Fresh Produce

  • 1 lemon (for juice)
  • 1 red cabbage* (finely shredded)

Koobideh Culinary Spice Kit

  • Sumac turmeric, black pepper, parsley

Cabbage

  1. In a BOWL, mix 1 tbsp lemon juice, salt & pepper to taste, and 1 tbsp oil.
  2. Add the cabbage and knead well.

  3. Cover. Let it rest for 2 hours.

Prepare

  1. In a BOWL, squeeze grated onions and discard all liquid.
  2. Add garlic, salt to taste (recommended 2 tsp), egg, and Kabob Koobideh spices. Mix well.
  3. Add meat. Knead well for 5 – 10 minutes.

Fry

  1. Wet your hands with water.
  2. Form 2 tbsp of meat into long, flat shaped meat patties.
  3. In a PAN, heat 1 tbsp oil over medium heat.
  4. Fry the kabobs for some minutes on each side until they are cooked and slightly browned.

Serve

  1. Serve the kabob in bread and/or with rice and with cabbage.
  2. Optionally, sprinkle the kabob with sumac and top it with onion & radish slices.
  3. Add grilled vegetables or Sabzi Khordan**.

  4. Enjoy!

Poke Sauce

  • 4 tbsp soy sauce or tamari
  • 1 tsp lime or lemon juice
  • 1 tsp oil
  • 1 tsp ginger grated

Culinary Spice Kit (choose one)

  • Furikake Toasted sesame seeds (white & black), roasted seaweed
  • Gomashio Toasted sesame seeds (white & black), sel gris sea salt

Instructions
 

Prepare

  • Cut large proteins, veggies, and fruits into bite-size pieces and chop big toppings.

1. Marinate

  • In a CONTAINER, mix poke sauce ingredients with 1-2 tsp Poke or Gomashio spices to taste.
  • Add the protein to the poke sauce.
  • Mix well, cover, and let marinate in the fridge for 1-2 hours.

2. Fry

  • If using chicken or beef, fry it in a PAN.

3. Serve

  • Place a base in your BOWL. Add the protein and your choice of veggies and fruits.
  • Garnish with toppings.
  • Optionally, sprinkle with a chili sauce.

Variations
  • Substitute sausages with 1 can of beans, rinsed. 
  • Add 2 finely chopped carrots, bell pepper, or other vegetable to the sauce.

  • 1 orange for juice
  • olive oil
  • salt & pepper

  • 1-2 fresh chilies
  • 1 cup vegetables of your choice e. g.

  • 2 cups cooked rice

Rougail Culinary Spice Kit

  • Pouch [1] Thyme, turmeric, ginger, bay leaves
  • Pouch [2] Makrut lime leaves 

Instructions
 

Salad

  • Mix 1 tbsp orange juice with salt & pepper to taste.
  • Add 1 tbsp oil. Mix or shake well.
  • Toss dressing over lettuce.

Prepare Sausages

  • Prick each sausage 2 times with a fork.
  • In a POT, bring 2 quarts of water to a boil.
  • Add sausages and cook for 5 minutes.
  • Remove the sausages. Let cool.
  • Cut them into 1/2-inch slices. Set aside.

Cook

  • In a POT, heat 2 tbsp oil over medium heat.
  • Fry onions until translucent.
  • Add garlic, carrots, and sausages.
  • Optionally, add chilies and other vegetables.
  • Fry 5-10 minutes. Stir frequently.
  • Add tomatoes, salt & pepper to taste, and Rougail [1] spices. Mix well.
  • Cover. Cook 20 minutes over low heat. Stir occasionally.

Serve

  • Sprinkle Rougail [2] spices to taste over plated Rougail or salad.
  • Enjoy!

Notes

Variations
  • Substitute sausages with chicken breast or thighs (cut into 1/2 inch pieces) or 1 can Kidney beans (rinsed) and skip the ‘Prepare Sausages’ step.

Salad dressing

  • In a small POT, heat orange jam with 1/2 cup of water, half of the ginger, and salt to taste.
  • Cook over slow heat for 10 minutes.
  • Stir in 1/2-1 tsp lemon juice. Set aside to cool.

Prepare balls

  • In a BOWL, combine onions, garlic, half of the ginger, chives, and Buddha Spices.
  • Add quinoa, salt & pepper to taste. Mix well.
  • Add 2 or more tbsp panko as needed to absorb most of the liquid.
  • Form little balls in the size of 1-inch diameter.
  • On a PLATE, roll the balls in the remaining panko until they are coated on all sides.

Fry

  • In a PAN, heat 4 tbsp oil over medium heat.
  • Fry quinoa balls on all sides until they turn brown and crisp.

Serve

  • Distribute salad in bowls.
  • Add quinoa balls and pour the dressing on top.

  • Make meatballs from poultry, pork, or veal instead of quinoa balls.

Chicken Inasal from the Filipino City of Bacolod has an earthy-peppery taste with a hint of nutmeg and a slight citrus flavor. 

Colored With Lipstick

The key ingredient is annatto or achiote powder. This spice from the “lipstick tree” colors the chicken orange-red and is very popular in Latin and Filipino cooking.

The Inasal Culinary Spice Kit includes the following spices:

Chili Vinegar Dipping Sauce

Optionally, add a chili vinegar dipping sauce made with fresh or dried chilies:

1 cup vinegar
1 small onion, finely chopped
2 cloves garlic, grated
1-2 fresh red chilis, finely sliced, or red chili flakes to taste
1 tbsp agave syrup or sugar
salt & pepper to taste

In a BOWL, mix all ingredients. 
Cover and set aside in the fridge for 1-3 days.

Pickled Vegetables

Instead or in addition to the tomato mango salad try this typical Filipino side of pickled vegetables.

Ingredients

Pickling Sauce

2 tbsp white vinegar
2 tbsp sugar
1-2 tsp soy sauce or tamari or fish sauce

Vegetables & Spices

1 English cucumber, thinly sliced
1 orange or red bell pepper, cut into thin strips
1 shallot or small onion
1-2 cloves garlic, thinly sliced
1/4 inch ginger, thinly sliced
1 tsp lemongrass powder or 1/2 tsp lemon zest

 

Directions

Pickling Sauce

In a small POT, heat 2 tbsp water and the vinegar. Add sugar and cook over low heat until the sugar is completely dissolved.

Let cool. Mix in soy sauce or fish sauce to taste.

Finish

In a JAR, add all vegetables and spices. 

Fill with the pickling sauce until all ingredients are covered. 

Store

Cover and set aside in the fridge for 1-3 days.

Marinade

  • In a BOWL, mix Inasal spices with the ingredients for the marinade and 2 tbsp lime juice.
  • Add chicken. Mix well. Cover.
  • Let marinate in the fridge for 3-24 hours.

Frying

  • In a PAN, heat 2 tbsp oil over medium-high heat.
  • Fry the chicken pieces on both sides until they are cooked.
  • Take chicken out. Cover. Let rest 5 minutes.

Salad*

  • In a BOWL, mix 1 tbsp lime juice, 1 tbsp soy sauce, and 1 tbsp oil.
  • Add mango and tomatoes. Mix well.
  • Season with salt & pepper and sugar (opt.) to taste.

Serve

  • Serve the chicken with your preferred sides.
  • Enjoy!

  • Substitute chicken with sirloin beef or pork tenderloin or cutlets.
