Char Kway Teow is a popular stir-fry street food in Malaysia and other Asian countries. It's best with wide noodles but other noodles work too. You can even serve the sauce over rice. Thanks to our spice blend you don't need oyster sauce. Add your preferred protein. We included extra vegetables with plenty of options. You can adjust the level of the salt and heat to your liking.

Ingredients
  

Protein

  • 8 oz medium fresh shrimp (*1) or thinly cut chicken breast or sirloin beef
  • 2 eggs whisked

Fresh Produce

  • 1 large leek (*2) (halved lengthwise), cut into 2 inch long pieces
  • 3 green onions cut into 1/2 inch long slices

Packaged Goods/Staples

  • 8 oz long noodles (*3)
  • 1/4 cup vegetable or chicken broth
  • 2-3 tbsp soy sauce or tamari (*4)
  • 2 tsp (brown) sugar or syrup
  • (vegetable) oil

Culinary Spice Kit

  • Shiitake mushrooms, garlic, onions, arrowroot, white pepper

Optional

  • 1-2 slices bacon cut into 1/2 inch thin strips
  • 4 oz mung bean sprouts
  • fish sauce or anchovy paste to taste
  • fresh chili finely sliced, to taste
  • 1 lemon for juice

Instructions
 

Prepare

  • Prepare the noodles according to package instructions. Keep them warm.
  • In a CUP, mix 1/4 cup broth, 2 tbsp soy sauce (*4), 2 tsp sugar, and the Char Kway Teow spices.

Fry Vegetables

  • In a LARGE PAN (*5), heat 2 tbsp oil over medium heat.
  • Add the leek. Fry until just soft.

Stir-Fry All Ingredients

  • Turn heat to high.
  • Add fresh shrimp (*1), chicken, or beef, and bacon (opt.).
  • Stir-fry for 1 minute.
  • Push the ingredients to the side.
  • Add the eggs to emptied PAN surface.
  • Gently push cooked parts from edges so that uncooked eggs can reach the hot PAN surface.
  • Add the noodles, green onions, and sprouts (opt.).
  • Toss gently until all ingredients are well mixed.

Add Sauce

  • Give the prepared sauce a quick stir and add it to the PAN.
  • Toss gently until all ingredients are well coated.
  • Cook for 2 minutes until the sauce soaks in.
  • If the dish appears dry, add 1 tbsp of water or soy sauce to taste, depending on your desired salt level.

Serve immediately.

  • Optionally, sprinkle to taste with fish sauce, fresh chilies, and/or lemon juice.
  • Enjoy!

Notes

(1) Shelled and deveined.
Optionally, substitute half of the shrimp with 4 oz fish cake, sliced.
If using cooked shrimp, add them before the noodles and stir-fry for 30 seconds.
Alternatively, add warm baked tofu cubes on the plated dish.
QUICK TOFU CUBES RECIPE:
Drain 1 lb firm tofu and cut it into 1/2 cubes.
Season with 1.5 tbsp soy sauce, 1 tbsp oil, and 1 tsp starch.
Bake at 350° F for 30 minutes on greased parchment paper, flipping halfway.
 
(2) Substitute the leek with 6 oz green asparagus or (precooked) baby broccoli or zucchini, cut into 2 inches long thin pieces.
(3) Recommended: flat rice noodles or other wide noodles, about 0.25-0.5 inch width.
Alternatively, skip the noodles and serve the sauce over cooked rice.
(4) Optionally, add up to 1 tbsp more and/or substitute 1/2-1 tbsp with dark soy sauce.

(5) Alternatively, divide the ingredients in half and cook in two batches.
If you like, use a large wok instead of the pan.

The origin of Shakshuka might be in Turkey, Spain, or Tunisia. The Israeli version with a beautiful top of poached eggs became famous around the world. This flavorful tomato stew with vegetables has usually a bit of heat. Our Turkish Marash pepper flakes add more flavor than heat.

The Magic of Za'atar

Add a dip with the versatile Za’atar blend. The key ingredient for this magic spice blend is a Mediterranean thyme, called za’atar.

Za’atar is more flavorful than the thyme from the common spice boards. Sumac adds a citrus note and sesame seeds a slight nutty crunch. Use it for a dip or marinade.

Variations
  • Adapt the recipe to your liking: without eggs, with hot chilies, and/ or other vegetables, for instance, pumpkin, leek, sweet potatoes, or mushrooms.
  • Instead of the dip, marinate 1 lb strips from chicken breast or sirloin beef in 1.5 tbsp za’atar, 2 tbsp oil, and salt to taste for 1-2 hours before frying.

Protein

  • 1.25 lb chicken breast or thighs [1]

Marinade

  • 3 tbsp soy sauce [2]
  • 1 tbsp sugar best: brown sugar or palm sugar
  • 1 tbsp oil

Fresh Vegetables

  • 2 carrots
  • 1 lemon for juice
  • 1 butter lettuce
  • 6 green onions thinly sliced
  • 2 fresh chilies (optional) thinly sliced

Gai Yang Culinary Spice Kit

  • 1 pouch Lemongrass, galangal, ginger, black pepper, chili, coriander, garlic, lemon peel, ginger, star anise, cilantro, onion, basil, cumin, white pepper, cinnamon, lemon oil

Suggested Sides

  • jasmine rice [3]
  • rice noodles
  • hearts of palm noodles

Instructions
 

Prepare

  • Cut chicken lengthwise in half, then into 1/4 inch thin slices.
  • On a GRATER, shred carrots with the largest shred size.
  • Drizzle carrots with 1 tsp lemon juice.

Marinade

  • In a CONTAINER, mix soy sauce, sugar, Gai Yang spices, and 1 tbsp oil.
  • Add the chicken slices and mix well.
  • Cover and let it marinate in the fridge 2 - 24 hours.

Fry

  • In a PAN, heat 2 tbsp oil over high heat.
  • Fry chicken slices until golden on all sides, turning frequently.

Serve

  • Place the chicken slices on lettuce leaves.
  • Top with shredded carrots and green onions.
  • Drizzle with lemon juice.
  • Optionally, add fresh chili slices.
  • Serve with your preferred side.
  • Enjoy!

Notes

[1] Alternative: Substitute with shrimp, sirloin beef, or tempeh.
[2] Recommended: Substitute soy sauce with 1 tbsp fish sauce.

[3] Optionally substitute part of the rice cooking water with 1 can of pure coconut milk and add 2 tsp sugar per 2 cups of rice.

  • In a CONTAINER, mix garlic, lemon juice, 3 tbsp oil, Pinchitos spices, and salt & pepper to taste.
  • Add chicken strips. Mix well.
  • Let it marinate in the fridge overnight.

Potatoes

  • Preheat OVEN to 425°F.
  • Mix potatoes with 2 tbsp olive oil and salt & pepper to taste.
  • Spread them onto a greased BAKING SHEET.
  • Bake them for about 15 minutes until golden and crisp, turning halfway.

Fry or Grill the Skewers

  • Thread chicken strips onto skewers in a zigzag shape, alternating with green onion pieces.
  • Fry or grill skewers over high heat for a few minutes until they are browned and cooked through.

Serve

  • Serve skewers and potatoes with your choice of pickles and sauces.
  • Enjoy!

Notes

* Substitute chicken with beef sirloin or lamb.
** Soak wooden skewers 30-60 minutes in water.

The aroma of Korean BBQ is mouthwatering. This seasoning includes shitake mushroom powder. Shitake is full of natural umami. Umami is the fifth taste, joining sweet, sour, salty and bitter. Korean chili pepper differs from the conventional chili pepper. It has a complex flavor and natural sweetness. We selected a milder version. The optional Kimchi adds additional heat.

  • 1 lb beef* sirloin thinly sliced against the grain

  • ▪ kimchi or pickles of your choice sliced
  • ▪ lettuce leaves of your choice
  • ▪ carrots, cucumber, daikon, radish, or cabbage (all thinly cut); mung bean sprouts
  • ▪ shallots or leek thinly sliced

Instructions
 

Marinade

  • In a CONTAINER, mix garlic, ginger, pear, shallots, Bulgogi [1] spices, soy sauce, 1 tbsp oil, sugar (opt.) and Bulgogi [2] spices to taste.
  • Add meat slices. Mix well. Cover.
  • Let it marinate in the fridge for 1 to 24 hours.
  • Take the beef out 30 minutes before frying.

Fry

  • Heat a PAN over high heat.
  • Add meat slices and stir fry for a couple of minutes until the meat is just cooked.

Serve Option 1

  • Place bulgogi, lettuce leaves, and your preferred sides on separate plates in the middle of the table.
  • Fill a large lettuce leaf with meat and your selected sides & toppings. Close it to form a bite-sized wrap. Enjoy!

Serve Option 2

  • Mix bulgogi and 1 cup vegetables of your choice.
  • Serve it with your selected sides. Enjoy!

Notes

* Substitute beef with pork, chicken, or tofu.
** An Asian pear is best if available.

Or use the spice blend in a bell pepper dip. Add a cold fresh cucumber summer salad with dill. Armenians like the salad more liquidy close to a soup.

Basturma Culinary Spice Kit

  • [1] Fenugreek, cumin, allspice, black pepper, smoked paprika
  • [2] Aleppo pepper
  • [3] Dill

  • cooked bulgur rice, or couscous

Instructions
 

Basturma Marinade

  • In a BOWL, mix 2 tbsp oil, 2/3 of the garlic, and Basturma [1] spices.
  • Add salt and Basturma [2] spices to taste.
  • In a CONTAINER, pour the marinade over the meat slices and mix well.
  • Let it marinate in the fridge for 24 hours.

Jajuk Salad

  • In a BOWL, mix yogurt with 1/2 cup of water.
  • Add Basturma [3] spices and 1/3 of the garlic.
  • Mix with cucumber and salt & pepper to taste.
  • Let it cool in the fridge for 1 hour.

Grill

  • In a PAN, heat 2 tbsp oil over high heat.
  • Add meat slices and fry quickly until the meat is just cooked. Turn frequently.

Serve

  • Serve basturma with jajuk and your preferred side(s).
  • Enjoy!

Notes

Alternative Vegetarian Spread or Dip

4 red bell peppers, halved
1 clove garlic
1-4 tbsp nuts (choose your favorite)
 
Roast bell pepper skin side up in the OVEN at 350°F about 20 min until the skin comes off. Let it cool. Peel. Blend the flesh in a food processor with 1 tbsp oil, 1 clove garlic, and optionally nuts. Add water as needed to get a smooth paste.
Add to taste: salt, Basturma [1] + [2] spices
