IKEA popularized Köttbullar, Sweden's national dish, around the world. Surprisingly, in 2018, Sweden revealed that their beloved meatballs originated in Turkey. In the 18th century, King Charles XII fell in love with Turkish meatballs and brought the recipe back to Sweden. Today, Köttbullar are typically served with mashed potatoes, a creamy brown sauce, and sweet-sour sides like cucumber salad and lingonberry jam.

Ingredients
  

Pickled Salad (Optional)

  • 1 English cucumber finely sliced
  • 1/8 cup vinegar apple cider or white vinegar
  • 1 tbsp sweetener [1]  or to taste
  • fresh parsley or dill (optional) finely chopped

Meatballs

  • 1.25 lb ground meat [2]
  • 1 egg
  • 3/8 cup milk dairy or nut milk
  • 1/4 cup breadcrumbs [3]
  • 2 tbsp butter

Sauce (Optional)

  • 2 tbsp butter
  • 3 tbsp flour any
  • 1 cup milk dairy or nut milk
  • 1 cup broth any

Suggested Sides

  • 1 jar berry jam [4]
  • mashed potatoes online recipe
  • boiled potatoes
  • any pickled vegetable that you prefer
  • steamed vegetables of your choice, e.g. carrots, green beans, peas and corn

Culinary Spice Kit

  • 1 pouch Onions, allspice, white pepper, black pepper, ginger, yellow mustard

Instructions
 

Pickled Salad (Optional)

  • In a BOWL, mix 1/3 cup of water with vinegar and salt to taste. Sweeten to taste and mix well.
  • Add cucumber slices to the bowl and mix well to coat them evenly.
  • Optionally, add fresh parsley or dill for extra flavor.
  • Let the mixture rest in the fridge for 2 to 24 hours before serving.

Meatballs

  • In a BOWL, whisk the egg.
  • Add Köttbullar spices, milk, and breadcrumbs to the bowl. Mix well and let it soak for 10 minutes.
  • Add the meat and salt (1 tsp recommended) to the mixture. Knead until everything is well combined, but do not overdo it.
  • Form the mixture into small meatballs.
  • In a PAN, melt 2 tbsp of butter over medium heat.
  • Fry the meatballs in the pan until they are cooked through, shaking the pan occasionally to ensure they brown evenly on all sides.

Sauce (Optional)

  • In a small POT, melt 2 tbsp of butter over medium heat.
  • Add the flour and gently whisk for about 3 minutes until the mixture changes color.
  • While whisking continuously, gradually add the milk and broth. Bring the mixture to a boil over medium heat.
  • Reduce the heat to low and cook for 15 minutes, stirring frequently.
  • Season with salt and pepper to taste before serving.

Serve

  • Serve the meatballs with the salad or steamed vegetables, mashed or boiled potatoes, jam, and optional sauce.

Notes

[1] For instance, agave syrup, honey, or sugar.
[2] Use a mixture of half beef and half pork, or any meat combination to your liking.
[3] Alternative: Substitute breadcrumbs with flour or ground nuts.
[4] Lingonberry is the best choice, available, for instance, at IKEA stores. Other options:
  • Raspberry or blueberry jam works fine as well.
  • Cook cranberries with some water and sugar into a thick sauce.
  • Just serve with fresh raspberries or blueberries.

IKEA made them famous around the world: Köttbullar, the national dish of Sweden. Surprisingly, in 2018, Sweden revealed Turkey as its origin. In the 18th century, King Charles XII fell in love with Turkish meatballs and introduced them to his home country. Today, Köttbullars are usually served with mashed potatoes, creamy brown sauce, and sour-sweet sides: cucumber salad and lingonberry jam.

 

Shopping list

  • 1 lb ground meat ( (half beef and pork or any to your liking))
  • 1 lb potatoes (boiled, peeled)
  • 1 English cucumber (finely sliced)
  • 1 jar berry jam*)
  • 1/4 cup breadcrumbs

You might have

  • 1/2 cup milk (plus some for the potatoes)
  • 2 tbsp butter
  • 1 egg
  • 1 tbsp agave syrup (or honey or sugar (or to taste))
  • 1/8 cup vinegar
  • salt & pepper

Sauce

  • 2 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1 cup broth

Optional

  • Fresh parsley or dill (finely chopped)

Culinary Spice Kit

  1. Mash the potatoes and reheat them with a little milk.
  2. Add salt to taste.

Serve

  1. Serve the meatballs with the salad, mashed potatoes, jam, and optional sauce. Enjoy!

*) Lingonberry is the best choice, available, for instance, at IKEA stores. Raspberry or blueberry jam works fine as well. Or, cook cranberries with some water and sugar into a thick sauce. Or, serve just with fresh raspberries or blueberries.
Substitute pickled cucumber salad with any other pickled vegetable that you prefer.
Substitute breadcrumbs with flour or ground nuts.

Caucasian Ajapsandal or Georgian Ajapsandali is a perfect summer dish since this eggplant stew with fresh herbs tastes best cold. While cooling, the vegetables can absorb the complex combination of typical Georgian spices. 

Meat is Optional

Lamb or beef can be added to this dish rich of vegetables with the additional instructions at the end of the recipe. Though, prepare for about 2 hours more to cook the meat tender. Faster is to serve Ajapsandali as a side to grilled meat.

 

Variations
  • Traditionally, it has a little heat from a fresh chili pepper, but this is up to you.
  • Substitute eggplant with zucchini for a change or if you prefer so.

  • 4 cloves garlic chopped
  • vegetable oil
  • salt & pepper

Ajapsandali Culinary Spice Kit

  • 1 carrot diced
  • grilled meat

Instructions
 

Prepare

  • Cut all vegetables into 1-inch pieces.
  • In a BOWL, add eggplants and 2 tsp salt.
  • Mix well. Let rest for 30 minutes.
  • Rinse eggplants and squeeze all liquid out.

Fry

  • In a PAN, heat 2 tbsp oil over high heat.
  • Careful of splatters, add eggplants and fry until they turn brown.
  • Add oil as necessary.

Cook

  • In a POT, heat 1 tbsp oil over medium heat.
  • Fry onions for 5 minutes. Add fried eggplants, garlic, and Ajapsandali spices.
  • Mix well and cook for 2 minutes.
  • Add tomatoes, bell peppers, optional chili and/or carrots, and salt & pepper to taste.
  • Mix well. Cover and cook over medium-low heat for 10-15 minutes.
  • Stir in cilantro or parsley.

Serve

  • Serve hot or cold with dark bread and optional grilled meat.
  • Enjoy!

Notes

Additional instructions for Ajapsandali with beef or lamb:
You need
  • 1 lb stew beef or lamb, cut in 1/2-inch cubes
  • 2 cups tomato puree
Prepare
  1. Season meat with salt and pepper.
  2. Dredge meat in 2 tbsp flour.
Cook
  1. Before frying the onions, add the meat, and cook about 5 minutes until it's browned all over.
  2. Take meat out and set aside.
  3. Fry onions for 5 minutes.
  4. Add meat, tomato puree, garlic, Ajapsandal Spices. and salt to taste. Mix well.
  5. Cover and cook over medium-low heat for 1.5 - 2.5 hours until the meat is almost tender. Add a bit water or tomato puree if necessary.
  6. Add fried eggplants.
  7. Continue with the cooking step 4 in the main recipe above.

Instructions
 

1. Prepare the Eggplants

  • You need: eggplants, salt
  • In a BOWL, add eggplant and a pinch of salt. Cover with cold water. Let rest for 15 minutes. Drain and dry the eggplants with kitchen paper.

2. Fry the Vegetables [4]

  • You need: olive oil, potatoes, eggplants
  • In a PAN, heat 2 tbsp olive oil over medium heat.
  • Fry potatoes in several batches until all potatoes are almost cooked.
  • Note: For an authentic taste, try not to brown the potatoes!
  • Fry eggplants in several batches until they turn slightly brown.

3. Fry the Protein

  • You need: chopped onion, chopped garlic, Moussaka Spices, meat, salt
  • In the meantime, in another PAN, heat 1 tbsp olive oil over medium heat.
  • Add the chopped onion and garlic, and cook until they are fragrant.
  • Add meat or lentils, Moussaka Spices, and salt to taste.
  • Stir-fry until meat is crumbled.
  • Optionally, add wine and cook over medium heat until all liquid is absorbed.
  • Add tomatoes and 1/4 cup of water.
  • Cook over medium heat until all liquid is absorbed.

4. Prepare the Sauce (shortly before baking)

  • You need: 2 tbsp butter, 2 tbsp flour, 1-2 cups of cold milk, 1 egg, 1-2 tbsp cheese (opt.), salt, nutmeg (opt.).
  • In a POT, melt 2 tbsp of butter over low heat.
  • Note: Pay attention not to burn the butter.
  • Gradually add 2 tbsp of flour, stirring constantly until smooth.
  • Add 1 cup of cold milk, stirring constantly to avoid lumps.
  • Note: For a thicker topping, add another cup of milk.
  • Continue to cook over low heat for 5 minutes, stirring frequently to prevent the mixture from sticking to the pot.
  • Quickly stir in 1 egg until fully incorporated.
  • Optionally, add 1-2 tbsp of grated cheese.
  • Season with salt to taste. Optionally, add a pinch of nutmeg.
  • Continue to cook, stirring frequently, until the oven is heated and your Moussaka is assembled for baking.

5. Assemble & Bake

  • Preheat the OVEN to 350°F.
  • In a BAKING DISH, place single layers in this order:
  • - potatoes, sprinkle with salt & pepper to taste
  • - eggplants, sprinkle with salt & pepper to taste
  • - cooked meat or lentils
  • If you use a small BAKING DISH, you can repeat the layers.
  • Pour the sauce over the Moussaka layers.
  • Bake in oven for 30-60 minutes until the sauce has set and the top turned slightly brown.

6. Salad (Optional)

  • Mix 3 tbsp orange juice, 1 tbsp oil, salt & pepper to taste. Toss over lettuce.
  • Enjoy!

Notes

[1] Substitute meat with a can of black lentils or sautéed mushrooms or sautéed onions and rice.
[2] Substitute wine with grape juice or other fruit juice.
[3] Recommended cheese: Swiss, gruyere, or parmesan.
[4] Tip to reduce the amount of oil: cook or bake one or more of the vegetables.

Though Moussaka doesn’t origin in Greece, it became the best known of all Greek dishes. Authentic Moussaka is a casserole made with ground lamb and eggplant covered with a thick layer of béchamel sauce. The latter is quite tricky to master. This recipe is a combination with Kleftiko, a lamb dish baked in parchment paper. It’s easy to prepare, fun to eat, and has a rich Moussaka flavor.

Ingredients
  

Shopping list

  • 1.5 lb lamb chops or beef sirloin steaks
  • 1/2 inch large eggplant cut lengthwise into thin 1/4 slices
  • 1/2 lb potatoes cut into thin 1/4 slices
  • 2 tbsp red wine
  • 2 tomato/es cut into 1/4 inch slices
  • 1 cup grated cheese of your choice
  • 1 lettuce of your choice

You might have

  • 1 onion sliced
  • 2-3 cloves garlic sliced
  • 1 orange for juice
  • olive oil
  • salt & pepper

Culinary Spice Kit

  • Black pepper thyme, cinnamon, bay leaves

Instructions
 

Prepare

  • In a large BOWL, add eggplant and a pinch of salt. Cover with cold water. Let rest for 15 minutes. Drain.
  • Season lamb with salt to taste.
  • In a BOWL, mix 7 tbsp oil, wine, and about half of the Moussaka Spices.
  • Preheat OVEN to 400°F.

Create 3 packets, each as follows:

  • On an 8-inch PLATE, place (1) ALUMINUM FOIL and (2) BAKING PAPER, each a sheet of about 20 inches long.
  • Staple: eggplant, lamb, tomato, garlic.
  • Place potatoes and onions around.
  • Drizzle with 3 tbsp of the oil mixture.
  • Season with salt and sprinkle with cheese.
  • Close BAKING PAPER, then FOIL
  • Place the packets on a baking rack.

Bake

  • Bake about 60 minutes until cooked.

Salad

  • Mix 3 tbsp orange juice, 1 tbsp oil, salt & pepper to taste. Toss over lettuce.

Serve

  • Serve salad with packets.
  • Enjoy!

Despite the name of this dish, it didn't originate in Naples. It's a variation of pasta al pomodoro (noodles with tomatoes), a basic Italian meal. This Napolitana spice blend adds the Mediterranean aroma of mixed herbs. Optionally, try a variation with vegetables or meat (Spaghetti Bolognese).

Sauce

  • In a POT, heat 2 tbsp oil over medium heat.
  • Add onions and fry them until they are translucent.
  • Careful of splatters, add tomatoes and Napolitana spices.
  • Optionally, add ground meat and stir until it's crumbled.
  • Optionally, add finely cut vegetables. Mix well.
  • Cover and bring to a boil.
  • Turn heat to medium-low.
  • Add salt and pepper to taste.
  • Cover and cook for 30-90 minutes.

Noodles

  • Cook the noodles according to package instructions.

Serve

  • Pour Napolitana sauce over the noodles.
  • Optionally, sprinkle with cheese, and garnish with basil or parsley leaves.
  • Enjoy!

A traditional Italian dinner consists of at least two courses: pasta, soup, or risotto as a first course, followed by a second course of meat or fish accompanied by vegetables or salad. Saltimbocca, a classic choice for the second course, pairs perfectly with a simple pasta dish.
This recipe offers a delicious chicken variation made with ground sage. For a more authentic experience, try Saltimbocca alla Romana, featuring fresh sage leaves and thin slices of tender veal.

  • 2 cloves garlic smashed
  • 4 anchovy filets
  • 1 cup black olives sliced

  • 8 slices prosciutto (raw ham), very thin

Suggested Sides

  • fresh Italian bread sliced
  • asparagus, cauliflower, or broccoli cooked

Instructions
 

First Course

  • In a large PAN, heat 2 tbsp oil over medium heat.
  • Cook garlic for 1 minute.
  • Add anchovies. Cook 2 minutes.
  • Add olives. Cook until olives turn slightly brown.
  • Add cooked spaghetti and 1 cup of the cooking water to the PAN. Cook for 1 minute.
  • Sprinkle Saltimbocca [2] spices on plated dish.

Second course - Prepare

  • Cover the chicken slices with PLASTIC WRAP and pound them to about 1/8 inch thickness.
  • Season them with the Saltimbocca [1] spices in an even layer. Don’t add salt!
  • Place prosciutto slices on top.

Second course - Cook

  • In a PAN, over medium heat, melt the butter.
  • Place the chicken bundles in the PAN in one layer, prosciutto side up.
  • Season with pepper to taste.
  • Fry chicken for a couple of minutes until the bottom starts to brown.
  • Add wine. Reduce heat to low. Cover.
  • Let cook for a few minutes until the chicken is done.

  • Serve Saltimbocca with your preferred sides.
