Shukto is a must on any festive Bengali dinner menu. It has a slight bitterness balanced with the sweetness of sugar. If you are not up for this, try a Panch Phoron recipe from our website. Panch Phoron is a Bengali five-spice blend. It's always used whole. The seeds are fried in oil until they pop and release their aromatic flavor.

Ingredients
  

Protein - Optional

  • 1 lb chicken thighs or breast cut into 1-inch pieces

Fresh Produce

  • 1 large potato
  • 1 large turnip see notes
  • 1 medium zucchini or squash
  • 1 small eggplant
  • 1 cup green beans

  • 1 inch ginger peeled and grated

Suggested Sides

  • cooked rice recommended: Basmati
  • flat bread naan or chapati

Culinary Spice Kit

  • 1 pouch Shukto [1] seeds Panch Phoron: Cumin, fennel, fenugreek, brown and yellow mustard, nigella seeds
  • 1 pouch Shukto [2] spice blend Yellow and brown mustard, ajowan, bay leaves

Instructions
 

Rice

  • If using rice, cook rice according to package instructions.

Prepare

  • Cut all vegetables into bite-size pieces.

Fry

  • In a large PAN, heat 6 tbsp oil.
  • Add Shukto [1] spices and ginger. Stir-fry 30 seconds until seeds start to pop.
  • Optional: Add chicken and salt to taste. Fry until all sides turn slightly brown.
  • Add potato, turnip, and salt to taste. Fry until they turn slightly brown.
  • Add all remaining vegetables and salt to taste. Fry until they turn slightly brown.

Cook

  • In a small CUP, dissolve Shukto [2] spices in 2 tbsp of water.
  • Add this spice paste and 1 cup of milk to the PAN. Cover. Bring to a boil. Turn heat to medium-low.
  • Cook for 5-10 minutes until vegetables and optional chicken are cooked.
  • Add 1-3 tsp sugar to taste.
  • Serve with rice or bread. Enjoy!

Notes

Variation:

Substitute turnip with daikon or 1 bunch radish.
Substitute one of the vegetables with 1 plantain or 1 sweet potato.

Preparing this dish is a breeze, and its irresistible flavor practically leaps into your mouth—hence the name "saltimbocca."
A traditional Italian dinner consists of at least two courses: pasta, soup, or risotto as a first course, followed by a second course of meat or fish accompanied by vegetables or salad. Saltimbocca, a classic choice for the second course, pairs perfectly with a simple pasta dish.
This recipe offers a delicious chicken variation made with ground sage. For a more authentic experience, try Saltimbocca alla Romana, featuring fresh sage leaves and thin slices of tender veal.

Ingredients
  

First Course

  • 2 cloves garlic smashed
  • 4 anchovy filets
  • 1 cup black olives sliced
  • 3/4 lb spaghetti or other pasta

Second Course

  • 1.5 lb chicken breast boneless, skinless, cut into 6-8 thin large slices
  • 8 slices prosciutto (raw ham), very thin
  • 2 tbsp butter
  • 1/4 cup dry white wine or cooking wine
  • olive oil

Suggested Sides

  • fresh Italian bread sliced
  • asparagus, cauliflower, or broccoli cooked
  • spinach or mushrooms sautéed with garlic

Instructions
 

First Course

  • In a large PAN, heat 2 tbsp oil over medium heat.
  • Cook garlic for 1 minute.
  • Add anchovies. Cook 2 minutes.
  • Add olives. Cook until olives turn slightly brown.
  • Add cooked spaghetti and 1 cup of the cooking water to the PAN. Cook for 1 minute.
  • Sprinkle Saltimbocca [2] spices on plated dish.

Second course - Prepare

  • Cover the chicken slices with PLASTIC WRAP and pound them to about 1/8 inch thickness.
  • Season them with the Saltimbocca [1] spices in an even layer. Don’t add salt!
  • Place prosciutto slices on top.

Second course - Cook

  • In a PAN, over medium heat, melt the butter.
  • Place the chicken bundles in the PAN in one layer, prosciutto side up.
  • Season with pepper to taste.
  • Fry chicken for a couple of minutes until the bottom starts to brown.
  • Add wine. Reduce heat to low. Cover.
  • Let cook for a few minutes until the chicken is done.

Serve

  • Serve Saltimbocca with your preferred sides.
  • Enjoy!

Variations
▪ Substitute chicken with veal or pork cutlets.
▪ Substitute chicken with eggplant or zucchini.
▪ Substitute prosciutto with Spanish jamón serrano, bacon, or cheese.

Ingredients
  

  • 1 English cucumber with skin (or 3-4 Persian cucumber)
  • 1 tbsp green seasoning (see notes for the recipe)

Instructions
 

  • Coarsely grate the cucumber.
  • Add some salt to the cucumber and let it sit in a strainer over a bowl.
  • After 15 minutes, squeeze the cucumber to get the most liquid out of it. Keep the liquid for later (see tip below).

Mix in to taste

  • 0.5-1 tbsp of the green seasoning.
  • Double Spices [2], and salt & pepper.
  • Let rest for 15 minutes.

200 years ago, the beer garden started as an extension of a brewery, where the brewery could sell beer directly to the consumer instead of delivering it to pubs. Last century, a Bavarian brewery owner created Obatzda to make use of overripe Camembert cheese. Today, Obatzda is a popular Bavarian beer garden dish that is served with pretzels and beer. You can also shake up your mac and cheese with this new taste.

  • 8 oz ripe Brie or Camembert cheese
  • 4 oz whipped cream cheese with chives
  • 1 onion finely chopped

  • Pouch [1] Caraway, paprika
  • Pouch [2] Cayenne pepper

Suggested Sides

  • 1 jar German pickles or sauerkraut

  • 8 oz elbow macaroni cooked
  • 1/2 cup cream

For Obatzda Stuffed Chicken

  • 2 chicken breasts

Instructions
 

Obatzda cream

  • Mash Brie or Camembert cheese with a fork.
  • Mix with butter, cream cheese, and chopped onions.
  • Season to taste with Obatzda [1] and [2] spices, salt, and pepper.
  • Add 4 tbsp beer and mix until it becomes a smooth cream.
  • Let rest for 30-60 minutes.

Serve

  • Serve with pickles or sauerkraut and pretzels or German style rye bread.

Variation: Obatzda ‘Mac & Cheese’

  • In a PAN, heat cream and stir in Obatzda cream.
  • Mix until it becomes a smooth sauce.
  • Add macaroni and mix well.

Variation: Obatzda Stuffed Chicken

  • Cut a horizontal slit into the chicken breast to form a pocket.
  • Fill with Obatzda cream. Close with tooth picks.
  • In a PAN, heat oil and fry chicken on medium until cooked through and browned.

  • 2 cups Basmati rice

Korma Culinary Spice Kit

  • [1] Cardamom pods
  • [2] Coriander, cumin, turmeric

Instructions
 

  • In a PAN (with LID), heat the butter.
  • Add Korma [1] spices and stir-fry for 1 minute.
  • Add onions and stir-fry until they turn golden. Be careful not to burn the butter.
  • Add ginger, garbanzo beans, and carrots. Stir-fry for 2 minutes.
  • Add rice and stir constantly for 2 minutes.
  • Add Korma [2] spices, 3 cups of water, peas, and salt and fresh chilies to taste. Mix well.
  • Bring to a boil. Reduce heat to low, cover and let cook for 15 minutes.
  • Please don’t lift the LID before the rice is ready to serve!
  • Turn off heat. Keep the PAN still covered and let rest for 10 minutes.
  • Enjoy!

Notes

  • Substitute garbanzo beans with 0.5 lb chicken breast, cut in 0.5 inch cubes.

A look at McDonald’s Szechuan sauce reveals that it consists basically of high fructose corn syrup, water, tomato paste, different kinds of vinegar, soy sauce, oil, garlic, chili peppers, “spices”, and artificial flavors and colors. We took on the challenge to make our own Szechuan aka Sichuan sauce healthy with ingredients and seasoning.

Ingredients
  

Shopping List

  • 1.5 lb skinless chicken breast, cut into thin strips or chicken wings
  • 2 cup bread crumbs for instance, panko, or substitute with almond meal
  • 1 frisee lettuce
  • 2 cups jasmine rice

Pantry Items

  • 1 orange for juice
  • tamari or soy sauce
  • vinegar (rice, balsamic or else)
  • agave syrup or sugar
  • tomato paste
  • oil recommended: sesame oil
  • salt & pepper

Sichuan Culinary Spice Kit Ingredients

  • Pouch [1] Tangerine peel, garlic, ginger, smoked paprika, Sichuan pepper (don’t use during pregnancy), star anise
  • Pouch [2] Bird’s eye chili pepper

Instructions
 

Chicken marinade

  • In a BOWL, mix chicken with 2 tbsp tamari and 2 tbsp orange juice. Let marinate for 30 minutes.

Rice

  • Cook rice according to package instructions.

Szechuan aka Sichuan sauce

  • In a small POT, heat 1 tbsp oil on medium-low heat.
  • Fry Sichuan [2] spices for 30 seconds.
  • Take the spices out, if you prefer a mild sauce.
  • Careful of splatters, add 2 tbsp syrup, 2 tbsp tamari, 2 tbsp vinegar, 1 cup water, and Sichuan [1] spices.
  • Stir in 1 tsp tomato paste.
  • Cook for 3-5 minutes until sauce thickens.
  • Add salt, syrup or vinegar to taste.

Breading

  • On a PLATE, beat the egg.
  • Add salt and pepper to taste.
  • Coat the chicken thoroughly.
  • On a different PLATE, spread bread crumbs and coat the chicken thoroughly.

Fry

  • In a PAN, heat 1 inch of oil.
  • Fry the chicken over medium-high heat until it’s cooked through and turned crispy.

Serve

  • Serve the chicken nuggets on lettuce leaves with rice and dip them into the Sichuan sauce.

Notes

Variations:
Substitute the chicken with mozzarella sticks, vegetable sticks, boneless pork cutlets (cut into 1-inch squares), or shrimp.
