IKEA made them famous around the world: Köttbullar, the national dish of Sweden. Surprisingly, in 2018, Sweden revealed Turkey as its origin. In the 18th century, King Charles XII fell in love with Turkish meatballs and introduced them to his home country. Today, Köttbullars are usually served with mashed potatoes, creamy brown sauce, and sour-sweet sides: cucumber salad and lingonberry jam.

Ingredients
  

Shopping list

  • 1 lb ground meat (half beef and pork or any to your liking)
  • 1 lb potatoes boiled, peeled
  • 1 English cucumber finely sliced
  • 1 jar berry jam*)
  • 1/4 cup breadcrumbs

You might have

  • 1/2 cup milk plus some for the potatoes
  • 2 tbsp butter
  • 1 egg
  • 1 tbsp agave syrup or honey or sugar (or to taste)
  • 1/8 cup vinegar
  • salt & pepper

Sauce

  • 2 tbsp butter
  • 3 tbsp flour
  • 1 cup milk
  • 1 cup broth

Optional

  • Fresh parsley or dill finely chopped

Culinary Spice Kit

  • Onions, white pepper, allspice, black pepper, yellow mustard, ginger

Instructions
 

Pickled Salad

  • In a BOWL, mix 1/3 cup of water with the vinegar and salt to taste. Sweeten to taste. Mix well.
  • Add cucumber slices and mix well.
  • Optionally, add fresh parsley or dill.
  • Let it rest in the fridge for 2 to 24 hours.

Meatballs

  • In a BOWL, whisk the egg.
  • Add Köttbullar spices, milk, and breadcrumbs. Mix well. Let it soak for 10 minutes.
  • Add the meat and salt to taste (1 tsp recommended). Knead until everything is well combined. Don't overdo it.
  • Form little meatballs.
  • In a PAN, melt 2 tbsp butter over medium heat.
  • Fry the meatballs until they are cooked through.
  • Shake the PAN occasionally to brown the balls all around.

Sauce

  • In a small POT, melt 2 tbsp butter over medium heat.
  • Add flour and gently whisk for about 3 minutes until it changes color.
  • Whisking continuously, add milk and broth and bring to boil over medium heat.
  • Turn heat to low and cook for 15 minutes, stirring occasionally. Season with salt & pepper to taste.

Mashed potatoes

  • Mash the potatoes and reheat them with a little milk.
  • Add salt to taste.

Serve

  • Serve the meatballs with the salad, mashed potatoes, jam, and optional sauce. Enjoy!

Notes

*) Lingonberry is the best choice, available, for instance, at IKEA stores. Raspberry or blueberry jam works fine as well. Or, cook cranberries with some water and sugar into a thick sauce. Or, serve just with fresh raspberries or blueberries.
Substitute pickled cucumber salad with any other pickled vegetable that you prefer.
Substitute breadcrumbs with flour or ground nuts.

Bring this popular dish to your home. Chicken Shawarma with sumac and baharat spices makes a good party dish and burger-alternative. If you can marinate the chicken in advance, it will intensify the flavor.

Yogurt for Mayonnaise

The dressing basis is made with yogurt instead of mayonnaise. It’s lighter and makes up for the double oil in the chicken preparation. You might sprinkle it with extra sumac.

Not Just For Chicken

If you are not a chicken fan, mix the Shawarma Spices [1] in any other beef or vegetables dish. It always turns out delicious! We recommend this Mediterranean combination:

Greek Salad with Lebanese Potatoes
  • In a BOWL, add romaine lettuce with tomatoes, cucumber, and tomatoes. Season with lemon juice, olive oil, salt, pepper, and Greek oregano. Add feta cheese and/ or black olives. Mix well.
  • Cut potatoes in the size of large French fries. Mix with Shawarma Spices [1], salt to taste, and 3 tbsp olive oil. Bake in the oven for about 30 minutes, turning midway.

  • 1 onion peeled and sliced

Culinary Spice Kit

  • Pouch [1] Sumac, allspice, black pepper, cinnamon, cloves, fenugreek, nutmeg, ginger

Instructions
 

  • Preheat OVEN to 425°F. *
  • Cut chicken into 1-inch cubes.
  • In a BOWL, mix 2 tbsp oil with Shawarma Spices [1] and salt to taste (1 tsp recommended). Add chicken, mix well until evenly coated.
  • On a BAKING SHEET lined with aluminum foil, spread chicken evenly.
  • Roast in the OVEN for 15 minutes, turning pieces midway.
    Shawarma Step 1
  • For the dressing, in a BOWL, mix yogurt, lemon juice, garlic, salt to taste, Shawarma Spices [2], and ½ tsp oil.
  • Cut the roasted chicken in thin slices. Toss with Shawarma Spices [3].
    Shawarma Step 2
  • Heat 1 tbsp oil in a large PAN. Quickly stir-fry the chicken slices until all sides are brown and crisp.
  • Serve on pita bread topped with vegetables and yogurt dressing.
  • Enjoy!

Notes

* If you have time to prepare the chicken in advance, marinate (step 2-3) and let it rest in a covered BOWL in the refrigerator up to 24 hours.

  • Mix the frozen fruits, 1 cup milk, Açaí powder, and optional ingredients in a blender.
  • Add slowly more milk as needed. Continue until you receive a consistency that is a bit thicker than a smoothie.
  • Distribute the mixture into two bowls and top with your favorite fruits, seeds, and more.
  • Enjoy!

Bánh mì refers to Vietnamese baguette. It’s a heritage from the French colonial period. Thit means meat. Our spice blend includes authentic Vietnamese cinnamon. It’s not only sweet but a bit spicy as well.

Bánh Mì Thịt Xíu Mại

This recipe is for Bánh mì thit xá xíu with BBQ pork. You can use other meat or find the meatball version (Bánh mì thit xíu mai) below. 

Variations
  • Substitute pork with chicken, turkey, or tofu.
  • Substitute daikon with radish or turnip.
  • Substitute daikon and carrots with coleslaw.

  • 2-4 Persian cucumber
  • 1-2 baguette
  • 4 cloves garlic grated
  • 4 tbsp tamari or soy sauce
  • 2 tbsp cooking wine e.g. Marsala/ dry sherry/ white wine
  • 4-6 tbsp agave syrup or honey or sugar
  • 2-8 tbsp rice wine vinegar or white vinegar
  • oil

Optional

  • 1 tsp sesame oil
  • 1 tsp fish sauce or 1 tbsp anchovy paste
  • mayonnaise
  • some sprigs cilantro
  • jalapenos

Culinary Spice Kit

  • Annatto, black pepper, Sichuan pepper (not recommended during pregnancy), fennel, Vietnamese cinnamon, star anise, and cloves

Instructions
 

Marinade

  • Cut meat in 1-inch cubes.
  • In a CONTAINER, mix garlic, tamari, cooking wine, 2 tbsp syrup, 1 tbsp oil.
  • Optional add sesame oil, fish sauce.
  • Stir in Banh Mi Spices.
  • Add meat. Mix well.
  • Let rest in the fridge for 2-24 hours. Stir halfway.

Pickles

  • Cut daikon and carrots into thin match-like strips or shred them.
  • In a BOWL, add 1 cup water.
  • Add to taste: 2-4 tbsp syrup, vinegar, 1-2 tbsp salt.
  • Let rest in fridge 2-24 hours.

Grill

  • Preheat OVEN to 390°F.
  • Place meat on a baking sheet with parchment paper.
  • Bake 30 minutes.
  • Turn halfway and brush meat with the marinade.

Cut

  • Cut cucumber in strips.
  • Cut meat thinly.

Assemble your Banh mi thit

  • Place meat in your baguette.
  • Add cucumber and pickles.

Optional

  • Spread mayonnaise on one half of the baguette. Top with cilantro leaves and/or sliced jalapenos.
  • Enjoy!

For the meatballs

  • 1 lb ground meat (pork veal, or poultry)
  • 1/2 lb jicama grated
  • 3 tomato/es chopped
  • 1 small onion finely chopped
  • 3 cloves garlic chopped
  • sesame oil
  • 2 tbsp tapioca starch

For the sauce

  • 1 large onion chopped
  • tomato paste
  • coconut or palm oil

For the pickles

  • 1 lb daikon and carrots mix 70:30
  • agave syrup or honey or sugar
  • rice wine vinegar or white vinegar

For serving

  • 2-4 Persian cucumber cut in thin strips
  • 1-2 baguette

Optional

  • tamari or soy sauce
  • fish sauce
  • mayonnaise
  • some sprigs cilantro
  • jalapenos sliced

Culinary Spice Kit

Instructions
 

Cook jicama

  • In a small POT, bring water to boil and cook jicama for 5 minutes. Drain and set aside to cool.

Pickles

  • Cut daikon and carrots into thin match-like strips or shred them.
  • Keep 2 tbsp cooked jicama aside and add remaining jicama to the daikon and carrots.
  • In a BOWL, add 1 cup water.
  • Add to taste: 2-4 tbsp syrup, vinegar, 1-2 tbsp salt.
  • Let rest in fridge 1-24 hours.

Fry garlic and onions

  • In a PAN, heat 1 tbsp sesame oil over medium heat. Add garlic and onions. Fry over medium-low heat until the onions turn brown. Take them out and set aside to cool.

Prepare meatballs

  • In a BOWL, mix ground meat, 2 tbsp jicama, fried garlic and onions, tapioca starch, and salt to taste. Mix well.
  • Form meatballs. Use about 1 tbsp of the meat mixture for each meatball.

Steam meatballs

  • In a large POT, place a deep soup plate. Fill water around the plate up to half of the height of the plate. Place meatballs in the plate. Cover POT. Heat water and steam meatballs for 15 minutes.

Sauce

  • In a PAN, heat 1 tbsp coconut oil. Add onions and Banh Mi Spices. Mix well.
  • Fry onions until they turn translucent.
  • Add tomatoes and salt to taste. Cook over slow heat for 10 minutes.
  • Add 1 cup of water and stir in 1-2 tbsp tomato paste.
  • Season with tamari and fish sauce to taste.
  • Add steamed meatballs and the liquid from its plate.
  • Mix well and let cook over low heat for 5 minutes, stirring in between.

Assemble your Banh mi thit

  • Place meat in your baguette.
  • Add cucumber and pickles.
  • Spread mayonnaise on one half of the baguette (optional).
  • Top with cilantro leaves and/or sliced jalapenos (optional).
  • Enjoy!

  • 2 cups Basmati rice
  • salt

Korma Culinary Spice Kit

  • [1] Cardamom pods
  • [2] Coriander, cumin, turmeric

Instructions
 

  • In a PAN (with LID), heat the butter.
  • Add Korma [1] spices and stir-fry for 1 minute.
  • Add onions and stir-fry until they turn golden. Be careful not to burn the butter.
  • Add ginger, garbanzo beans, and carrots. Stir-fry for 2 minutes.
  • Add rice and stir constantly for 2 minutes.
  • Add Korma [2] spices, 3 cups of water, peas, and salt and fresh chilies to taste. Mix well.
  • Bring to a boil. Reduce heat to low, cover and let cook for 15 minutes.
  • Please don’t lift the LID before the rice is ready to serve!
  • Turn off heat. Keep the PAN still covered and let rest for 10 minutes.
  • Enjoy!

Notes

  • Substitute garbanzo beans with 0.5 lb chicken breast, cut in 0.5 inch cubes.

Salad Base

  • 1 lb mixed lettuce salad of your choice (cut in 1 inch slices)

Salad Dressing

  • balsamic vinegar
  • 1 orange (for juice)

  • 3-4 Ahi tuna steaks (fresh sushi-quality)
  • vegetable oil

Suggested Side

  • fresh baguette

Ahi Tuna Culinary Spice Kit

  • pouch [1] smoked paprika, oregano, black pepper, white pepper
  • pouch [2] Chipotle chili

Instructions
 

Protein

  • Season both sides of the tuna steaks with Ahi Tuna [1] spices, and salt and Ahi Tuna [2] spices to taste.
  • In a PAN, heat 2 tbsp vegetable oil until smoking hot.
  • Add tuna steaks. Cook each side for 1 to 1 1/2 minutes. The inside will still be rare.
  • If you want the tuna fully cooked, turn the heat to medium and cook until done.
  • Cut the tuna steaks into slices of about 1/4 inch.

Salad

  • In a BOWL, place lettuce.
  • In a CUP, mix 1 tbsp balsamic vinegar with 1 tbsp fresh orange juice. Add syrup to taste (optional).
  • Season with salt and pepper to taste.
  • Mix with 1 tbsp olive oil.
  • Toss it over the lettuce and mix well.

Serve

  • Place salad on plates and the tuna slices on top. Serve with fresh baguette.
  • Enjoy!

Notes

Variations:
