Global Bean Burger - Sides and Toppings

Ingredients
  

  • olive oil
  • salt & pepper to taste.

Burger Dressing

  • 1/2 cup mayonnaise or yogurt
  • 1 to 2 tbsp of lemon juice, to taste.
  • sweetener to taste
  • chili to taste

Roasted Bell Peppers

  • 2 to 3 halved red bell peppers

Baked Potatoes

  • 1 lb (sweet) potatoes
  • 1 tbsp paprika or Potato spices
  • salt & pepper to taste

Mushroom, Spinach, Eggplant, or Onion

  • garlic to taste, optional
  • 4 oz vegetables Mushroom, Spinach, Eggplant, or Onion

Instructions
 

Burger Dressing

  • In a CUP, combine 1/2 cup mayonnaise or yogurt with 1 to 2 tbsp of lemon juice, to taste.
  • Gradually add water, 1 tbsp at a time, until the dressing reaches a smooth, pourable consistency (not too runny).
  • Add sweetener and chili to taste, adjusting to your preferred level of sweetness and heat.
  • Mix until fully combined.

Roasted Bell Peppers

  • Preheat the OVEN to 350°F.
  • Place 2 to 3 halved red bell peppers, skin-side up, on a lined BAKING SHEET.
  • Bake for 20 to 40 minutes, or until the skin starts to blister and develop black spots.
  • Remove from the oven. Once cooled, peel off the skin and season with salt & pepper to taste.

Baked Potatoes

  • Preheat OVEN to 350°F.
  • Cut 1 lb (sweet) potatoes into 3/4-inch wedges.
  • Toss with 2 tbsp oil, 1 tbsp paprika or Potato spices, and salt & pepper to taste.
  • Spread them on a greased BAKING SHEET in a single layer.
  • Bake for 20 to 30 minutes, turning after 10 minutes, until soft inside and crisp outside.

Mushroom, Spinach, Eggplant, or Onion

  • In a PAN, heat 1 tbsp olive oil over medium heat, adding optional minced garlic.
  • Sauté 4 oz of chopped vegetables until soft.
  • Season with salt & pepper to taste.
