Instructions
Burger Dressing
In a CUP, combine 1/2 cup mayonnaise or yogurt with 1 to 2 tbsp of lemon juice, to taste.
Gradually add water, 1 tbsp at a time, until the dressing reaches a smooth, pourable consistency (not too runny).
Add sweetener and chili to taste, adjusting to your preferred level of sweetness and heat.
Mix until fully combined.
Roasted Bell Peppers
Preheat the OVEN to 350°F.
Place 2 to 3 halved red bell peppers, skin-side up, on a lined BAKING SHEET.
Bake for 20 to 40 minutes, or until the skin starts to blister and develop black spots.
Remove from the oven. Once cooled, peel off the skin and season with salt & pepper to taste.
Baked Potatoes
Preheat OVEN to 350°F.
Cut 1 lb (sweet) potatoes into 3/4-inch wedges.
Toss with 2 tbsp oil, 1 tbsp paprika or Potato spices, and salt & pepper to taste.
Spread them on a greased BAKING SHEET in a single layer.
Bake for 20 to 30 minutes, turning after 10 minutes, until soft inside and crisp outside.
Mushroom, Spinach, Eggplant, or Onion
In a PAN, heat 1 tbsp olive oil over medium heat, adding optional minced garlic.
Sauté 4 oz of chopped vegetables until soft.
Season with salt & pepper to taste.
