Sate Ponorogo

  • 1 lb chicken breast or thighs or sirloin beef cut into 0.5 inch thin slices
  • 2 cups jasmine rice
  • 1 inch English cucumber cut into 1/2cubes
  • 24 skewers*)
  • 1/2 cup peanut or cashew butter
  • 1 small onion chopped
  • 2 cloves garlic
  • 6 tbsp soy sauce or tamari**)
  • 1-3 tbsp sugar brown
  • oil salt
Optionally
  • 1 inch large daikon peeled, cut into 1/2cubes
  • 1 tbsp dried shrimps or anchovy paste
  • 1 fresh chili sliced

Instructions
Rice
  1. Cook rice according to package instructions.
Sate Ponorogo Sauce
  1. In a FOOD PROCESSOR, blend onions, garlic, 1/4 cup of water until smooth. Optionally, add dried shrimps and/ or chilies.
  2. In a POT, heat 1/4 cup of oil. Carefully stir in peanut butter. Add onion-garlic water, 1 cup of water, 2 tbsp soy sauce. Season to taste with Sate Ponorogo spices (start with 1 tsp), sugar, and salt. Mix well.
  3. Cover. Bring to boil. Turn heat to low and simmer for about 30 minutes until the sauce thickens, turns dark, and the oil separates on the surface. Stir frequently.
Marinade
  1. In a large BOWL, mix 2 tbsp oil with 2 tbsp Sate Ponorogo sauce and 4 tbsp soy sauce. Add chicken, mix well, and let marinate for 30 minutes.
BBQ
  1. Thread chicken onto skewers and grill or fry them until they are cooked and light brown.
Serve
  1. Serve Sate Ponorogo skewers with rice, sauce, cucumber, and optionally daikon.
  2. Enjoy!
Recipe Notes

*) If using wooden skewers, soak them first for 30 minutes in water.

**) Or Indonesian kecap manis sauce, if available.
