Ingredients

- 1 carrot, finely grated
- 1 onion, finely chopped or grated
- 1 stalk celery, finely chopped
- 1 green onion, finely sliced (optional)
Dairy
- 1/4 cup milk or substitute
Packaged Food/Staples
- 1/2 lb elbow macaroni
- 1 cup mayonnaise or substitute
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar or syrup, or to taste
- 1/4-1/2 cup finely chopped pineapple (optional)
- Salt and pepper to taste
Instructions
1. Prepare the Noodles
- Cook the macaroni according to the package instructions. Ensure it's cooked al dente.
- Drain and rinse with cold water. Let it cool down for 15 minutes.
2. Prepare the Dressing
- In a large BOWL, add mayonnaise, milk, vinegar, sugar, and optionally pineapple.
- Whisk until well combined.
- Season with salt and pepper to taste.
3. Combine
- Add the macaroni to the bowl with the dressing.
- Gently fold the macaroni into the dressing until they are well coated.
- Add salt & pepper to taste.
- Add the vegetables and gently mix until evenly distributed.
4. Chill Overnight
- Cover the bowl and keep it in the fridge overnight.
- Adjust salt & pepper to taste.
