Hawaiian Coleslaw

Ingredients
Fresh Produce
- 1/2 head green cabbage, finely shredded (optionally, mix with red cabbage)
- 1 carrot, finely grated
- 1 small onion, finely chopped
- 1-2 tbsp finely chopped cilantro or parsley
- 1/2 cup finely chopped pineapple or mango, or mandarin
Packaged Food/Staples for Dressing
- 2 tbsp apple cider vinegar
- 1 tsp soy sauce or substitute
- 1 tbsp (brown) sugar or syrup, or to taste
- 2 tbsp vegetable oil
- salt & pepper to taste
Instructions
- In a large BOWL, add all dressing ingredients and whisk to combine well.
- Add the cabbage and knead the dressing into the cabbage.
- Add the remaining ingredients and mix well.
- Let chill in the fridge for about one hour.
