Bahraini Machboos

Machboos is claimed to be the national dish of the Kingdom of Bahrain. It is full of Arabian flavors. Gulf Baharat spice blends differ from other Baharat blends in that Gulf Baharat adds dried omani limes and roses. Omani limes, also called Loomi, are an important ingredient in the cuisine of the countries around the Persian Gulf. Enjoy the unique taste.

Shopping List:

2 lb chicken drumsticks

2 large tomatoes, chopped

1 green chili or bell pepper, deseeded and chopped

2 tbsp chopped cilantro or parsley

8 oz carrots, shredded

4 cups hot vegetable or chicken broth

2 cups Basmati rice

You might have:

1 large onion, peeled, finely chopped

4 cloves garlic, peeled and grated

1 inch ginger, peeled and grated

2-3 lemon

ghee or butter, and veg. oil

salt & pepper



Variations:

Use 1 lb fish filet or paneer instead of chicken. Only add and fry it shortly in step 8. Don’t add it in step 5. Skip step 6.

Machboos Culinary Spice Kit Ingredients:

[1] Gulf Baharat: Omani limes, roses, turmeric, cinnamon, paprika, cardamom, cloves, coriander, nutmeg

[2] Cardamom

Instructions:

1. Prepare rice: Rinse rice and soak it in cold water with 3 tbsp lemon juice 10 min. to overnight in the fridge. Drain + set aside.

2. Salad: Mix carrots with 1-2 tbsp lemon juice, Machboos Spices [2], salt & pepper to taste and 1 tbsp oil.

3. Prepare chicken: Season chicken with salt and pepper.

4. Fry onions: In a large POT, heat 2 tbsp ghee. Add onions and stir-fry until translucent.

5. Fry veggies: Add garlic, ginger, chili or bell pepper, and Machboos Spices [1]. Stir-fry 2 min.
Add chicken, tomatoes, and broth.

6. Cook chicken: Bring to boil. Turn to low heat. Cook 20 min. Remove chicken and set aside.

7. Cook rice: Add rice and salt to taste. Mix well. Cover. Bring to boil. Turn to low heat. Cook about 15 min. Don’t stir! When rice is cooked, stir in cilantro or parsley.

8. Fry: In a PAN, heat 1 tbsp oil. Fry chicken about 10 min. until cooked through.



Serve chicken on top of rice and with the carrot salad as a side dish. Enjoy!
