Shopping list
  • 1lb chicken pieces with skinor lamb or beef
  • 10oz couscous
  • 1/2small white cabbagequartered
  • 0.5lb pumpkincut in 2-inch thick pieces
  • 0.5lb carrotscut in half
  • 0.5lb turnips or daikoncut in 8 pieces
  • 1/2bunch parsley or cilantro or mixedfinely chopped
You might have
  • 1medium onionhalved and sliced

Optional vegetables as (partly) substitutes
  • 1large zucchinihalved and cut lengthwise
  • 2 tomato/esquartered
  • 1cup green beans
Optional
  • 1cup garbanzo or fava beans (from a can, rinsed)
  • 3/4cup raisins

  • 4medium onionshalved and sliced
  • 3/4cup raisins
  • 1tbsp butter
  • 1-2tbsp sugar
Culinary Spice Kit
  • Pouch [1] paprika, turmeric, ginger, black pepper, saffron
  • Pouch [2] cinnamon, cardamom
Instructions
Tfaya (optional)
  1. In a POT, melt butter.
  2. Add sliced onions, salt & Couscous Spices [2] to taste.
  3. Cook over medium-low heat for 2 minutes, stirring constantly to detach the onions.
  4. Add 2 tbsp of water.
  5. Cover and cook for about 30 minutes until the onions are soft. Stir occasionally.
  6. Add raisins and sugar.
  7. Cover and cook for about 30 minutes until the onions are caramelized. Stir occasionally.
Stew
  1. In a large POT, heat 2 tbsp olive oil over medium heat.
  2. Fry meat and onions until the meat turns slightly brown on all sides.
  3. Add vegetables, salt to taste, and Couscous Spices [1].
  4. If you use zucchini, add them after 10 minutes.
  5. If you use lamb or beef, cook meat in water and spices until it’s almost tender, before you add the vegetables.
  6. Add 2.5 cups of water.
  7. Cover POT and bring to boil.
  8. Cook over medium-low heat for 15 minutes.
  9. Add the herbs and optionally garbanzo beans and/or raisins and Couscous Spices [2] to taste. Mix well.
  10. Continue to cook for about 5-10 minutes until all ingredients are soft but not mashed.
Couscous
  1. Prepare couscous according to package instructions.
Serve
  1. On a large plate, serve stew over couscous.
  2. Optionally, top with Tfaya.
  3. Enjoy!
