Kari Koko - Seychellois Coconut Curry

Coconut curries are preferred dinner dishes on the Seychelles Islands. Very popular are the octopus and chicken curries. This recipe for a one-pot chicken curry dish with three sides: a fresh-fruity salad, rice, and “Ladob”.
Nutmeg Creates a Coconut Heaven

Ladob is a side made from sweet potatoes cooked in coconut milk. You can substitute sweet potatoes with plantains or banana. This dish is spiced with nutmeg and cinnamon.

Ladob Dessert

Our tip: If you are too busy to make all for one dinner, save the Ladob for a dish with grilled fish. Or go for a Ladob banana dessert. Just add 1/2 cup of sugar or agave syrup and optional vanilla powder.

Variations
  • Substitute chicken with veal or fish filet.
  • Eggplant is a great substitute for a vegetarian coconut curry.
  • Add a green papaya chutney (see recipe below).

Papaya Chutney

Ingredients

  • 1 green papaya (unripe)
  • 1 onion
  • 1 lime for juice
  • oil, salt & pepper
  • Optional: 1 chili pepper

Directions

  1. Finely grate papaya.
  2. Halve and finely slice onion.
  3. In a BOWL, mix papaya with 1 tsp salt. Set aside for 10 minutes. Drain and squeeze all liquid out.
  4. In a PAN, heat 1 tbsp oil over medium heat and fry onions until they turn translucent.
  5. Optionally, add finely sliced chilies and fry for one minute.
  6. Add papaya and continue to fry for about 5 minutes, until the papaya is tender.
  7. Season to taste with lime juice, salt & pepper.

Ingredients
  

Shopping list

  • 1.25 lb chicken breast or thighs cut into 1-inch pieces 
  • 1 can coconut milk 13.5 - 15 oz
  • 2 cup rice
  • 2 sour apple grated
  • 1 cup grated carrots or turnips
  • 1 onion chopped
  • 3 cloves garlic grated
  • 1 inch ginger grated
  • 1-2 lemons for juice
  • oil
  • salt & pepper

Culinary Spice Kit

  • turmeric, cinnamon, coriander, onion, chili, cumin, garlic, curry leaves, fenugreek, ginger, yellow mustard, cardamom, black pepper

Instructions
 

Rice

  • Cook rice according to package instructions.

Salad

  • Mix apples, carrots, and/or turnips.
  • Add to taste: lemon juice, salt & pepper.
  • Add 1 tbsp oil. Mix well.
  • Cover and let rest for 15 minutes.

Kari Koko

  • In a POT, heat 1 tbsp oil. Fry onions until translucent.
  • Add garlic, ginger, and Kari Koko Spices. Stir-fry 1 minute.
  • Add chicken and salt to taste. Stir-fry 3 minutes.
  • Mix in coconut milk. Cook about 20-30 minutes over medium-low heat, until the chicken is cooked and the sauce thickened. Stir occasionally.

Serve

  • Serve Kari Koko over rice with the salad or green papaya chutney (see notes).
  • Optionally, add the ladob side dish (see notes).
  • Enjoy!

Though Moussaka doesn’t origin in Greece, it became the best known of all Greek dishes. Authentic Moussaka is a casserole made with ground lamb and eggplant covered with a thick layer of béchamel sauce. The latter is quite tricky to master. Alternatively, try a combination with Kleftiko, a lamb dish baked in parchment paper. It’s easy to prepare, fun to eat, and has a rich Moussaka flavor.

Shopping list

  • 1 lb ground meat lamb or beef recommended
  • 1/2 large eggplant cut lengthwise into thin 1/4 slices
  • 1/2 lb large potatoes cut lengthwise into thin 1/4 slices
  • 2 tbsp red wine
  • 1 cup diced tomatoes fresh or from can
  • 1 cup grated cheese of your choice
  • 1 lettuce of your choice

You might have

  • 1 small onion chopped
  • 2 cloves garlic chopped
  • 1 orange for juice
  • 2 tbsp butter
  • flour
  • 1 cup milk
  • 1 egg
  • olive oil
  • salt & pepper

Culinary Spice Kit

  • Black pepper,thyme, cinnamon, bay leaves

Instructions
 

Prepare

  • In a BOWL, add eggplant and a pinch of salt. Cover with cold water. Let rest for 15 minutes. Drain and dry the eggplants with kitchen paper.

Fry Step 1

  • In a PAN, heat 2 tbsp olive oil over medium heat.
  • Fry potatoes in several batches until all potatoes are almost cooked, but not brown. Careful! It is important that you don't brown the potatoes!
  • Fry dried eggplants in several batches until they turn slightly brown.

Fry Step 2

  • In the meantime, in another PAN, heat 1 tbsp olive oil over medium heat.
  • Add meat, onion, garlic, Moussaka Spices, and salt to taste.
  • Stir-fry until meat is crumbled.
  • Add wine and cook over medium heat until all liquid is absorbed.
  • Add tomatoes and 1/4 cup water and cook over medium heat until all liquid is absorbed.

Prepare Sauce (shortly before baking)

  • In a POT, melt 2 tbsp butter over low heat.
  • Stir in 2 tbsp flour.
  • Slowly stir in 1 cup of milk.
  • Quickly stir in 1 egg.
  • Season with salt and pepper to taste.

Bake

  • Preheat oven to 400°F.
  • In a BAKING DISH, place single layers in this order:
  • - potatoes
  • - sprinkle with salt & pepper to taste
  • - eggplants
  • - sprinkle with salt & pepper to taste
  • - meat
  • - cheese
  • If you use a small BAKING DISH, you can repeat the layers.
  • Pour sauce over Moussaka layers.
  • Bake in oven for 40-60 minutes until the milk-egg-mix has set and the top turned slightly brown.

Salad

  • Mix 3 tbsp orange juice, 1 tbsp oil, salt & pepper to taste. Toss over lettuce.
  • Enjoy!

Ingredients
  

Shopping list

  • 1.5 lb lamb chops or beef sirloin steaks
  • 1/2 inch large eggplant cut lengthwise into thin 1/4 slices
  • 1/2 lb potatoes cut into thin 1/4 slices
  • 2 tbsp red wine
  • 2 tomato/es cut into 1/4 inch slices
  • 1 cup grated cheese of your choice
  • 1 lettuce of your choice

You might have

  • 1 onion sliced
  • 2-3 cloves garlic sliced
  • 1 orange for juice
  • olive oil
  • salt & pepper

Culinary Spice Kit

  • Black pepper thyme, cinnamon, bay leaves

Instructions
 

Prepare

  • In a large BOWL, add eggplant and a pinch of salt. Cover with cold water. Let rest for 15 minutes. Drain.
  • Season lamb with salt to taste.
  • In a BOWL, mix 7 tbsp oil, wine, and about half of the Moussaka Spices.
  • Preheat OVEN to 400°F.

Create 3 packets, each as follows:

  • On an 8-inch PLATE, place (1) ALUMINUM FOIL and (2) BAKING PAPER, each a sheet of about 20 inches long.
  • Staple: eggplant, lamb, tomato, garlic.
  • Place potatoes and onions around.
  • Drizzle with 3 tbsp of the oil mixture.
  • Season with salt and sprinkle with cheese.
  • Close BAKING PAPER, then FOIL
  • Place the packets on a baking rack.

Bake

  • Bake about 60 minutes until cooked.

Salad

  • Mix 3 tbsp orange juice, 1 tbsp oil, salt & pepper to taste. Toss over lettuce.

Serve

  • Serve salad with packets.
  • Enjoy!

  • 1 cup sesame seeds
  • 1/4-1/2 cup olive oil

Shopping list for Tahini Sauce

  • 1 cup tahini paste store-bought or see additional recipe below
  • 2-5 cloves garlic peeled and grated
  • 1/4-1/2 cup lime or lemon juice

Instructions
 

Tahini paste (Optional)

  • In a PAN, over medium heat, roast sesame seeds until they turn golden brown. Stir frequently and be careful, not to burn the seeds!
  • In a FOOD PROCESSOR, mix sesame seeds and 1/4 cup of oil into a paste.
  • Add slowly more oil if necessary, 1/2 tbsp at a time.
  • The ideal paste should be just liquidy enough that it doesn't stick to a spoon. Though, it doesn't have to be perfect.

Tahini sauce

  • In a BOWL, mix tahini paste with 1/4 cup of water.
  • Add garlic, salt and lime juice to taste.
  • Depending on how liquid your tahini paste is, you might need to add more water. The sauce should be liquid enough to pour it over the falafel, but not watery.

Açaí berries come from Açaí palm trees that grow in the Amazonian rainforest. It's told that they are named after an Amazonian girl. Her name Iaca is Açaí spelled backward. The fruits from the tree saved her tribe from hunger. They have been an indispensable part of the Brazilian diet ever since. In some regions, the dinner table is not complete without a bowl of açaí pulp as a filling side dish. Our take on the Açaí Bowl adds the benefits of the trendy super fruit with organic açaí powder.

  • 2 cups frozen berry mix
  • milk of your choice*

Optional

  • agave syrup or honey as a sweetener
  • 1 tbsp of your favorite nut or seed butter
  • leaves of baby kale or spinach

Topping Ideas

  • slices fresh fruits e. g. banana, kiwi
  • Rolled oat flakes, coconut flakes, granola
  • Chia, flax, sunflower, or pumpkin seeds
  • Dried goji berries

Culinary Spice Kit

  • Açaí powder

Instructions
 

  • Mix the frozen fruits, 1 cup milk, Açaí powder, and optional ingredients in a blender.
  • Add slowly more milk as needed. Continue until you receive a consistency that is a bit thicker than a smoothie.
  • Distribute the mixture into two bowls and top with your favorite fruits, seeds, and more.
  • Enjoy!

*recommended: almond, soy, coconut, or rice milk

  • 1.5 cup semolina
  • 0.5 cup sugar use to taste: up to 0.25less or more
  • 2 tsp baking soda
  • 0.25-0.5 tsp ground small mastic tears
  • 1.5 cup yogurt
  • 0.5 c milk
  • 1 tbsp lemon juice

Shopping list for the syrup

  • 0.75 cup sugar use to taste: 0.25less or up to 0.75more
  • 1 cup orange juice
  • 3 green cardamom pods optional
  • 1 stick cinnamon optional

Shopping list for garnish (optional)

  • 1 orange halved and sliced
  • 0.5 cup powdered sugar
  • 1 cup ice cream vanilla or orange flavor

Instructions
 

Syrup

  • In a small POT, add bring 0.5 cup of water to boil.
  • Stir in sugar until dissolved.
  • Optional: Add cardamom or cinnamon.
  • Mix in orange juice. Return to a boil.
  • Turn heat to low and cook slowly for about 10 minutes. The syrup shall have thickened but still be runny.
  • Remove and let cool.

Batter

  • In a BOWL, mix semolina with sugar, baking soda, and mastic.
  • Add yogurt, milk, and lemon juice.
  • With an ELECTRIC MIXER, beat until the batter is creamy.

Bake

  • Preheat OVEN to 350°F.
  • Spread a thinly layer of butter onto a BAKING PAN.
  • Pour the batter into the BAKING PAN.
  • Bake for about 1 to 1.5 hours until its baked and lightly golden.
  • If the top turns brown before it fully baked, cover the pan with aluminum foil for the remaining baking time.
  • Take the BAKING PAN out.
  • Pour syrup over hot cake.
  • Let cool.

Serve

  • Sprinkle cake with powdered sugar.
  • Serve cake with orange slices and/or ice cream.
