Pollo a la Brasa – Peruvian Roasted Chicken

Pollo a la Brasa is a rotisserie chicken. This popular Peruvian dish gets its smoky sour taste and red color from fruity-sweet Aji Panca chili pepper. Aji Panca is one of the most important condiments in everyday Peruvian cooking. It is very mild and good to use in sauces and stews as well.

Peruvian grilled chicken is often served with Aji Verde sauce which is made from green jalapenos.

Chicken Marinade

Mix 1/4 cup dark beer, 1 tbsp tamari, 2 tbsp vinegar, 5 grated cloves garlic, Pollo a la Brasa Spices [1], and salt to taste.

Pollo a la Brasa Culinary Spice Kit Ingredients:

[1] Aji panca pepper, cumin, rosemary, black pepper

[2] Green jalapeno


Aji Verde Sauce

Finely chop 1 bell pepper and 1 green onion. Mix with 1 clove garlic, 1 tbsp chopped cilantro, and 2 tbsp lemon juice. Mix with 4 oz queso blanco or feta cheese and knead well. Add 1 tbsp oil and Pollo a la Brasa Spices [2] to taste.

Lima Bean Salad

This Lima bean salad is refreshing and a good addition to any BBQ buffet. It’s easy to make any time with a few pantry items.

Mix 3 tbsp lemon juice, salt and pepper to taste, and 1 tbsp oil. Add rinsed beans (1 can Lima beans or kidney beans) and 1 cup frozen corn. Mix well. Let rest for 1 hour.

Vegetarian Version

The spices can add a special flavor not only to chicken. Try this vegetarian recipe for an egg sauce instead.

Egg Sauce

Finely chop 5 hard boiled eggs. Add 1 clove garlic, 1 tsp vinegar, 1 cup yogurt, salt + Pollo a la Brasa Spices [1] to taste.

Serve the egg sauce and the Aji Verde sauce over boiled potatoes.
