Dig in a bread bowl filled with this hearty soup and savor the taste of fresh Hungarian paprika. Gulyás or Goulash is Hungary’s national dish. It was invented by Hungarian cattlemen and was their favorite dish. Originally, it was a soup, not a stew, and we kept this intention along with the typical ingredients. Though, to save you some cooking time, we substituted stew beef with sausages.

Hortobágyi Palacsinta – Hungarian pancakes

Variations

  • Substitute sausages with any other meat sausages or with 1 can navy beans.
  • Add white cabbage or green beans.
  • If you have time to make the soup with stew meat, check out the recipe below.

  • 2 cup beef or vegetable broth
  • 1 tbsp tomato paste

  • 8 oz sour cream

Instructions
Pancakes
  1. In a BOWL, beat eggs. Add milk and mineral water. Slowly beat in flour.
  2. Cover and set aside in the fridge for 15 minutes.
  3. In a medium-size PAN, heat oil over medium heat. Pour one laddle pancake batter onthe PAN and spread the batter out until it covers the whole PAN.
  4. Cook on medium-low heat until done. Flip the pancake halfway (when the top is not anymore liquid).
  5. Repeat this until all batter is used.
Gulyás
  1. In a large POT, heat 1 tbsp olive oil over medium heat.
  2. Add ground meat, Gulyás Spices, onion, and bell pepper.
  3. Stir-fry until meat is crumbled.
  4. Add broth, tomato paste, and salt & pepper to taste. Mix well.
  5. Cover. Bring to boil. Turn heat to medium.
  6. Cook over medium heat for about 10-15 minutes until the bell peppers are almost cooked.
  7. Stir in sour cream and bring to boil.
  8. Turn heat off. Set aside.
Option 1: Assembly & Serve
  1. On a PLATE, place one pancake. Add Gulyás meat in the center.
  2. Close the pancake first from left and right, next from the other two sides. It should look like a little square package.
  3. Pour Gulyás sauce over pancakes.
  4. Serve immediately.
Option 2: Assembly & Bake
  1. Preheat OVEN to 300°F.
  2. On a PLATE, place one pancake. Add Gulyás meat in the center.
  3. Close the pancake first from left and right, next from the other two sides. It should look like a little square package.
  4. In a BAKING DISH, place filled pancakes next to each other in one single layer.
  5. Pour Gulyás sauce over pancakes.
  6. Bake for 10-15 minutes, until it's baked through but not crisp.
  7. Enjoy!

  • 1 can tomato/es whole or chopped (8 oz)
  • 24 oz beef or vegetable broth

Instructions
Gulyás
  1. In a large POT, heat 2 tbsp oil over high heat.
  2. Season meat with salt and pepper.
  3. Fry meat until all sides turn slightly brown.
  4. Stir in Gulyás Spices and fry some seconds without burning the spices.
  5. Add onions, tomatoes, broth, and salt & pepper to taste.
  6. Cover the POT. Bring to boil. Turn heat to low-medium and cook for 1 hour and 15 minutes.
  7. Make sure that the soup is cooking slowly but doesn't stop to cook.
  8. Add potatoes and bell peppers. Cook 15-20 minutes until the potatoes are just cooked.
Optional serving
  1. Cut off the top of each bread.
  2. Scoop most of the inside out.
  3. Fill with Gulyás. Serve immediately.
  4. Enjoy!

  5. Cook over medium heat for about 10 minutes until the vegetables are almost cooked.
  6. Stir in tomato paste. Cook 5 minutes.
Optional serving
  1. Cut off the top of each bread.

  3. Fill with Gulyás. Serve immediately.
