Ghormeh Sabzi Herb Stew

Ghormeh Sabzi is a very popular Persian stew from several herbs. Usually it is made with lamb stew meat and whole omani limes and needs to be cooked for many hours. This recipe can be prepared in only 30 minutes thanks to ground omani limes and tastes like heaven even without meat.

Unique Flavor

Fenugreek leaves, called methi, and the Persian dried limes, called omani limes, account for the unique Ghormeh Sabzi flavor. Crush some leaves in your hand and note the scent of caramel. We recommend serving the stew with rice, because the intensity of the flavor is too strong without it. With rice it’s just right!



The Ghormeh Sabzi Culinary Spice Kit includes the following spices:

Dried fenugreek leaves (methi), turmeric, and omani limes (Persian dried limes).

If you want to use these spices on other dishes, try these:

  • Sprinkle methi leaves on a curry or cream sauce.
  • Mix 1 tbsp methi leaves and 1 tsp omani-turmeric-blend with some butter in cooked vegetables.
  • Mix 1 tsp omani-turmeric-blend in any dish that works good with lemon.

Instructions
Rice
  1. Cook rice according to package instructions.
  2. In a medium POT, heat 2 tbsp oil. Fry onion and garlic over low-medium heat until onions are translucent.
  3. Careful of splatters, add leek. Over medium heat, fry until leek is almost cooked.
  4. Add herbs and Sabzi Spices [1]. Mix well. Continue to fry until the mixture lost most moisture and starts to turn brown. Pay attention not to burn the herbs.
  5. Add beans, 2 cups of water, salt to taste, and Sabzi Spices [2]. Mix well. Cover. Bring to boil. Cook over medium-low heat 20 minutes. Stir occasionally.
Optional
  1. Optional: Season meat with salt and pepper. In a PAN, heat oil and fry meat quickly over high heat to your desired doneness. Add to the POT. Mix well. Turn off heat.
Serve
  1. Serve Ghormeh Sabzi with rice. Enjoy!
Recipe Notes

Variations:

  • Add lamb or other meat, thinly sliced (see optional step).
  • Substitute leek with spinach leaves. Skip step 3. Add spinach with herbs in step 4.
  • Substitute kidney beans with black beans or cranberry beans.
  • Substitute cilantro with another bunch of parsley.
