A look at McDonald’s Szechuan sauce shows basically the following ingredients:

  • high fructose corn syrup
  • water
  • tomato paste
  • different vinegars
  • soy sauce
  • oil
  • garlic
  • chili peppers
  • “spices”
  • artificial flavors and colors

We took on the challenge to make a SpiceBreeze Szechuan sauce with healthy ingredients and pure, freshly ground spices.

If you want to make your own spice blend, grind and blend: 1 tbsp tangerine peel, 1 tsp Sichuan peppercorns, 1/2 tsp smoked paprika, a dash star anise.
Then grate 1 inch fresh ginger and 3 cloves garlic and add it to the sauce.

Szechuan Culinary Spice Kit Ingredients
  • Szechuan [1] Tangerine peel, garlic, ginger, smoked paprika, Sichuan pepper (don’t use during pregnancy), Star Anise

Instructions
Chicken marinade
  1. In a BOWL, mix chicken with 2 tbsp tamari and 2 tbsp orange juice. Let marinate for 30 minutes.
Rice
  1. Cook rice according to package instructions.
Szechuan sauce
  1. In a small POT, heat 1 tbsp oil on medium-low heat.
  2. Fry Szechuan Spices [2] for 30 seconds.
  3. Take the spices out, if you prefer a mild sauce.
  4. Careful of splatters, add 2 tbsp syrup, 2 tbsp tamari, 2 tbsp vinegar, 1 cup water, and Szechuan Spices [1].
  5. Stir in 1 tsp tomato paste.
  6. Cook for 3-5 minutes until sauce thickens.
  7. Add salt, syrup or vinegar to taste.
Breading
  1. On a PLATE, beat egg.
  2. Add salt and pepper to taste.
  3. Coat chicken thoroughly.
  4. On a different PLATE, spread bread crumbs and coat chicken thoroughly.
Fry
  1. In a PAN, heat 1 inch of oil.
  2. Fry chicken over medium-high heat until it’s cooked through and turned crispy.
Serve
  1. Serve chicken on lettuce leaves with rice and Szechuan dipping sauce.
Recipe Notes

Variations:

Substitute chicken with mozzarella sticks, vegetable sticks, pork cutlets, or shrimps.
