Fight the Winter with Hot Vibes from Caribbean Doubles

Caribbean Doubles are a trendy street food on Trinidad & Tobago. You can find them all over the islands. It’s a dish made with garbanzo beans and served on two, overlapping small flat breads, hence its name “Doubles”. Though, the real deal – and heat – comes from the toppings.


How About Meat

This is a vegetarian dish. Garbanzo bean provide a lot of proteins. If you crave for some meat, either add grilled chicken chunks on top, or use less beans and add some ground meat instead.

Here comes the Real Deal

Obligatory topping is a fruit chow, made with pineapple or mango. If you don’t like these, go for any fruit that you like. Adjust the seasoning depending on how sweet or sour your fruit is. The chow shall have a sour, sweet, salty, and hot taste, all at the same time. Habanero chili pepper is very hot. So be careful with it.

Doubles With Even More Flavors

If you can spare the time, make also the green seasoning for a Caribbean cucumber chutney. The recipe makes more than you need for this dish. You can keep the seasoning in the fridge and use for salads or sandwiches.

Variations

  • Substitute pineapple with mango or other fruit (see notes above).
  • If you don’t like cilantro, substitute it with parsley.
  • For a non-vegetarian version, use less beans and add ground meat instead, or just add some grilled chicken in your Doubles.
  • Prepare a chutney from the cucumber (see additional recipe below).

Instructions
In a BOWL
  1. Mix pineapples with 1/4 cup cilantro and half of the garlic.
  2. Add to taste: pineapples can liquid, lime juice, Double Spices [2], and salt.
  3. Cover and let rest for 1/2-2 hours.
In a large POT
  1. Heat 2 tbsp oil. Add shallots and half of the garlic.
  2. Fry over medium heat until the shallots turn translucent.
  3. Stir-in Doubles Spices [1]. Add garbanzo beans, 1 1/4 cup of water, and salt & pepper to taste.
  4. Cover and bring to boil. Reduce heat to medium-low. Cook for 15 minutes.
  5. Mash some of the beans with a fork or potato masher.
  6. Add 1 tbsp cilantro. Cook over low heat for another 5 minutes.
In a PAN
  1. Quickly fry the bread with some oil.
Serve
  1. Serve beans on bread, topped with pineapples and cucumbers.
  2. Enjoy!

  • 0.5 inch ginger grated

  • 1 tbsp green seasoning (see recipe above)

  • 1 English cucumber with skin (or 3-4 Persian cucumber)
  • 1 tbsp green seasoning (see recipe above)
Instructions
  1. Coarsely grate the cucumber.
  2. Add some salt to the cucumber and let it sit in a strainer over a bowl.
  3. After 15 minutes, squeeze the cucumber to get the most liquid out of it. Keep the liquid for later (see tip below).
Mix in to taste
  1. 0.5-1 tbsp of the green seasoning.
  2. Double Spices [2], and salt & pepper.
  3. Let rest for 15 minutes.

Tip:
Drink the cucumber water pure or mixed in a fruit smoothie.
