This Christmas Eve, SpiceBreeze subscribers were invited to the first course of a traditional Polish supper with this clear borscht soup, called ‘Barszcz Wigilijny’. The soup is made from beetroots and mushrooms. It’s poured over homemade mushroom dumplings or your favorite tortellini.

The Barszcz spice blend can be used also for this European lentil soup. The soup is best with brown lentils. For a quick weeknight dinner, start with a can well-rinsed lentils and a quart vegetable broth. Add small pieces of vegetables to taste, for instance: leek, carrots, and/or celery, and potatoes. Season with salt and vinegar to taste. Add Barszcz spice blend to taste. Optional smoked sausages or simple hot dogs make this dish even richer.

Khoresh Gheimeh is a traditional Persian lamb stew with yellow peas. It is also extremely delicious without any meat. The key ingredient is dried omani lime. Their distinct flavor cannot be accomplished with other citrus fruits. You will notice a smell in your house that draws you impatiently to the kitchen. Omani limes are usually added in whole and cooked over hours. We created a shortcut with crushed omani limes. Now you can enjoy Khoresh Gheimeh on any week night.

Mulligatawny was originally a hot pepper sauce served with rice. It became very popular as a soup during the British colonial era in India. Today it is the national soup of India, and still a very popular in England. There are many different versions. Try this one with tamarind as main ingredient of the curry. Add as much pepper as you like.
